- Why does the sugar content vary so much between different brands of Kombucha?
As with many fermented products, kombucha requires sugar to fuel an effective fermentation process. The living kombucha culture consumes most of the organic raw sugar during fermentation, turning the tea solution into a potent powerhouse of healthy goodness, full of naturally occurring organic acids, enzymes, and the beneficial bacteria you see floating around in the bottle, which ultimately gives our consumer nutritional benefit. At MOJO we’re passionate about creating a real deal, traditional kombucha that has been handcrafted with minimal intervention. We choose not to dilute our ‘booch before bottling, and we do not add any sugar or sweeteners post fermentation. Doing so would disguise the great taste of the brew we have spent weeks creating! Some kombuchas on the market use less sugar at the beginning of the fermentation process and then compensate with sweeteners and flavours later on. From our perspective, we are wary of kombucha which contain stevia or erythritol as we understand these highly processed sweeteners are added before bottling to mask unbalanced flavour profiles caused by compromised fermentation. This is because less sugar in fermentation means less healthy acids in the end product. Find out more.
- What do you mean by proven probiotics?
Probiotics are ‘good’ or ‘friendly’ bacteria that help to restore and replenish the natural healthy bacteria in the digestive system and reduce the growth of harmful organisms. Kombucha has naturally occurring probiotics from the fermentation process, but to ensure each bottle has real health benefits, MOJO is made with a powerful probiotic that is proven to assist muscle recovery, digestion and immunity. Each bottle contains 1 billion colony forming units of Bacillus coagulans GBI-30 6086, a probiotic strain that is ten times more likely than yoghurt cultures to reach your gut alive and act efficiently. - Why does my MOJO need to be refrigerated at all times?
MOJO Kombucha requires cold storage at all times, not only to keep the healthy yeast and bacteria happy and to stop it fermenting any further – remember it is a living product!
- Are there any nasties?
All MOJO Beverages are completely free from any additives, preservatives, artificial colours, flavours or sweeteners. We use real fruit and spices to create our different varieties.
- Is Kombucha safe to give to children, or to consume while pregnant or breastfeeding?
As stated on our bottles, there are trace elements of alcohol present as a residual of the fermentation process. We monitor our kombucha religiously, to ensure we are within all state and national legislated standards of alcohol limit (less than 0.5% or 1.15%). If you have any concerns, we advise you to seek the advice of your health professional.
- How much caffeine is in MOJO Kombucha?
The organic tea in our kombucha naturally has caffeine, much of which is fermented out of the product. There is 5mg of caffeine per 100mL of kombucha – so approximately 16.5mg per bottle.
- What are the sodium levels?
5.3mg per 100mL on average.
- There are bits in the bottle, what is this?
These bits are the proof that our product is living. They are healthy strands of Kombucha and other goodness, and they are to be enjoyed as part of the drink. Roll the bottle gently to mix them in.
- How long does it keep for?
Once opened, we recommend 2 days in the fridge (that’s if you don’t drink it all at once)! From production unopened MOJO has a 7 month shelf life.
- It tastes a little bit like apple cider, is this normal?
Yes, that is the naturally occurring fermented notes and the organic lactic and acetic acids you can taste.
- This bottle of MOJO is a little flatter/fizzier/funkier than my last, is this normal?
